Pho Hoa

Pho Hoa is the latest Vietnamese noodle shop to open along the stretch of Nicollet Avenue known as Eat Street, and it does not disappoint. This might be in part due to the surprising fact that it is a link in a San Jose–based chain that stretches from here to South Korea—and a lot of places in between. Pho features different tiers of ingredients that range in price from $5.95 to $7.95. That way you can go from simple won tons and broth to elaborately chewy tripe and fatty, rare shaved beef or brisket. All the soups feature a redolent broth bursting with star anise, and the accompanying ingredients are as fresh as they come. If soup is not your game, there are salads and broken rice options, such as a lusciously silky grilled lemongrass chicken thigh with sticky rice and fried cabbage roll. But when the soup is this good, slurping is the way to go.
