Birdwing Spa's Farm Buttermilk Oat Pancakes

1 c. old-fashioned rolled oats
11/4 c. buttermilk
1/4 c. Egg Beaters
1/8 c. whole-wheat flour
1/4 c. ground flaxseed
1 T. honey
1/2 t. baking powder
1/2 t. baking soda
1/4 t. cinnamon
1/8 t. salt
1 T. vegetable oil
Nonstick cooking spray
Combine oats and buttermilk in bowl. Cover and refrigerate overnight or at least one hour. Add next 8 ingredients to oat mixture. Mix thoroughly. Stir in oil. Coat griddle with nonstick spray, and heat to medium-high. Drop 3 T. batter onto griddle for each pancake. Brown both sides. Serve with syrup.
Makes 5 servings (2 pancakes per serving)
