Summer Brownie

1/2 c. soft butter
4 oz. dark chocolate
3 eggs
1 t. vanilla
1-1/2 c. sugar
Pinch of salt
3/4 c. sifted all-purpose flour
3/4 c. chopped pecans

Preheat oven to 350 degrees. Lightly butter 9-inch baking pan. Set aside.

Boil water in saucepan or bottom half of double boiler. In dry, stainless steel bowl or top boiler pan combine butter and chocolate and place over simmering water to melt butter and chocolate.

In another bowl, whisk eggs, vanilla, sugar, and salt by hand or with mixer with whisk attachment until eggs are pale yellow. Slowly add melted chocolate/butter to egg mixture.

Add sifted flour, in thirds, to chocolate-egg mixture, folding it in with alternating spatula and whisk movements. Add chopped pecans. Pour into prepared pan. Bake 3035 minutes.
