Another subtle love letter to Minneapolis living can be seen in the front bar at Fuji Ya. Surrounding one column is a sparkly gold vinyl booth, which is exactly like--in an inside-out, completely opposite way--one of the famed booths by the piano bar at Nye's Polonaise Room.

I love kampyo, which is pickled gourd, and is a treat I only ever see in sushi. Not sure if it exists outside of being wrapped in seaweed and rice. Both rolls were well presented with some raging hot wasabi that I kept challenging myself to swallow.

I think of Fuji-Ya as one of the less ostentatious Japanese restaurants in town (excluding Japanese steakhouses, of course). The staff, menu, and decor are pleasant and accessible. It might make a good restaurant to choose for those trying Japanese for the first time.

Best of all, the sushi is first-rate: you can never go wrong with any of the buttery maguro (big eye being the best) or the mirugai (giant clam). The Dynamite specialty roll---yellowtail that's spicy with chili bean sauce and cooled off with cucumbers---is also noteworthy.

This wasn't my favorite visit to a place that usually provides a solid experience. I'll come back, but maybe give it some time. And, I'll sit at the sushi bar. Recommended: The splits of sparkling wine and the seaweed salad-as a general rule anywhere, sit at the sushi bar for a more complete sushi experience.

"Sit at the sushi bar and just have them deliver whatever they want" at this Lyn-Lake "hipster" destination (read: DJs on-site) and its Downtown St. Paul offshoot, with both locations offering a "diverse" selection of "dependably good" Japanese items delivered by "courteous" staffers; if a few are inclined to say "so-so", most endorse the duo as "winners."

Ages ago, the pioneers at Fuji Ya created an unmistakable roll of distinction, the No. 9. Crispy tempura shrimp, cucumber, and spicy mayo are delicately wrapped with salmon and avocado, then doused with unagi sauce. So prolific was this roll that it traveled, with the sushi masters and their secrets, to restaurants and menus across town. It may be our quintessential local roll.
