Roasted Eggplant Monte Cristo

This notably tasty and light variation of the classic grilled cheese features a core of Gruyère, pancetta, and fire-roasted red bell peppers between slices of eggplant that’s then coated with panko crumbs, fried, topped with tapenade, and set in tomato coulis.
